Your son has such a great attitude about food! Today he opened his back pack at snack time, and exclaimed so delightedly, “I have an apple!”
This is how my son’s preschool teacher greeted me yesterday. I laughed happily and she continued, “Every day, he is so happy about and grateful for his food. ‘Look, I have cookies!’ ‘Hey, stew!!’”
She told me her response to him has been, “You are so lucky to have a mommy that makes all this good food for you every day.” Aw
What a lovely start to our new school year!
If I have time in a morning, I might make a fresh batch of biscuits or cookies. I always put some of those aside, in sets of two, for days that are more rushed. Other days I just throw some breakfast into his heat-conditioned thermos. It all works!
It’s beautiful and amazing to see my son eager, delighted, sociable, comfortable, focused, peaceful, grounded, well-behaved and naturally listening in his new environment

We have good days…and then we mix things up a bit (unintentionally) and have a weekend of die-off that was…WOW. Let’s just say it was a test. I just prayed the whole weekend…let him get through this before Tuesday when he goes back to school. Well, on Monday like clockwork…things “passed” and he is chipper and our delightful boy. I am still struggling with the lunch box, however. Everything seems to get spilled at school….So I try to send less “spillable” food. We are on a very limited diet now, so things are very basic. I do, however, want him to be excited about lunch at school…so I search far and wide.
Can you share the biscuit recipe? I have coconut cookies/crackers and muffins made from the pulp from my juicer. I also just made pull taffy with my mom from honey so he would have something in his lunch box while the other kids bring Halloween stuff in. I even got a package so i can put his treats in it and seal it up just for him
Any other suggestions would be much appreciated.

Anne: Yep, I sure know about those, er, tests. So glad your son was back on track without having to miss out on school! I hear you about the spillables. What I’ve been doing is putting the solid parts of the stew into a thermos, leaving the broth out. (Of course, the meat and veggies are soaked in broth, so he’s still getting it.) The other day I put big chunks of ‘Michelle’s Sunburgers‘ in his thermos. That was a hit.
