Someone on our list dreamt last night of ice cream, so I’m going to share my two favourite fixes here.
Banana Ice Cream or Milkshake
Use less egg for ice cream consistency and more for a milkshake.
(Who would know how repulsed I was by bananas pre-GAPS?)
- 1-1.5 well-ripened then frozen banana
- 1-3 eggs
- pure vanilla extract (not sure how much I put in; start with 1/2 tsp)
Blend.
Optional: Add any combination of walnuts, shredded coconut, pecans, strawberries, etc. Those doing GAPS + cocoa can add that, too.
Eat.
Update: My most amazing combos to date are: banana/walnuts/shredded coconut and banana/a few frozen strawberries/loads of walnuts.

The recipe is not mine to share, but is offered by Jordan Maerin in her book ‘Raw Foods for Busy People’. The book, which offers several awesome GAPS-friendly recipes -including a replacement for refried beans (actually raw almonds)- is only $13 US and is available here.
Jordan offers four flavour options for the Whipped Cashew Cream.
This ice cream, which doesn’t melt so is awesome for picnics, is also a great cake icing!

Hi Baden, I am wondering which vanilla extract you use? In australia we have vanilla in a fructose base or an alcohol base. Niether of these appeal to me (allergic to both at present) however I was going to make this for my son and wondered if the alcohol based one was GAPS legal.

I use Orchid brand organic vanilla extract. It is based in alcohol. Several types of alcohol are permitted on GAPS. My son and I have both been fine with this. We do limit our baking, though, for other reasons.

I made my own, half a bottle of vodka (GAPS legal), cut the vanilla pods length ways and put inside the bottle and leave for 3 weeks. Yum!
Natural News has a wonderful bag of vanilla already de-podded…for direct use or decoction in vodka!!
